Naturally Smoked Cod poached in milk & cream with chopped onions & sliced new potatoes .
Ingredients
- 1 tablespoon olive oil
- 300 grams New potatoes thinly sliced
- 125 grams Smoked Bacon sliced
- 1 whole Brown Onion finely chopped
- 500 grams Naturally Smoked Cod
- 300 ml Double cream thickened (lightly whipped)
- 300 ml Milk
- Fresh Parsley (Chopped)
- 2 ind. Bay leaves

Instructions
- prepare the ingredients
- Cook the sliced potatoes in salted water until soft. then drain before adding to the poaching mix.
- Whilst the potatoes are cooking ...Fry the bacon strips in the olive oil until crispy then remove and drain. (use a deep frying pan)
- Gently fry the chopped onions in the same oil for 2 -3 minutes without colouring.
- Add the Smoked Cod along with the cream, milk, chopped parsley and the bay leaves to the pan and bring to a gentle simmer. Add seasoning and cover with a sheet of baking paper. Poach for approx 7 - 8 mins on a gentle heat.
- Remove the baking paper and add the pre cooked sliced potatoes. Warm through for a further 5 mins then serve. Top with the crispy bacon strips and garnish with a little more chopped parsley and a slice of lemon.
