INGREDIENTS:
For the marinade:
- 2 TBS light soy sauce
- 2 TBS light olive oil
- the juice of one orange
- 3 TBS rice wine vinegar
- 1/2 tsp crushed red chillies
- 1 TBS finely grated peeled fresh ginger root
You will also need:
- 4 (6 ounce) salmon fillets, about 1 1/2 inched thick
- fine sea salt and freshly ground black pepper
- 2 TBS light olive oil
- 2 TBS chopped fresh coriander leaf (cilantro)
- 1 TBS minced spring onions
